Orange Beef & Caramelized Fennel With Wilted Spinach
- 6 teaspoons promise buttery spread
- 1/2 pound sirloin steak
- 1 fennel
- 1 sweet onion small, thinly sliced
- 1/4 teaspoon salt
- 1 can fat free reduced sodium beef broth
- 1/4 cup orange juice
- 1 tablespoon cornstarch
- 6 cups baby spinach leaves
- In 12-inch nonstick skillet, melt 2 teaspoons Promise(R) Buttery Spread over medium heat and brown steak, about 3 minutes. Remove and keep warm.
- In same skillet, melt remaining Spread over medium heat. Add fennel, onion and salt and cook, stirring occasionally, 13 minutes or until tender. Stir in broth blended with orange juice and cornstarch. Bring to a boil over high heat. Reduce heat to low and simmer 4 minutes or until thickened. Stir in beef and spinach until spinach is wilted. Serve, if desired, over hot cooked brown rice.
