Italian Lasagna
- 1 lb. ground beef
- 2 Tbsp. olive oil
- 1 onion, chopped
- 3 cloves garlic, crushed
- 1 tsp. parsley
- 1 tsp. oregano
- 1/2 tsp. basil
- 16 oz. tomato sauce
- 6 oz. tomato paste
- 1 1/2 tsp. salt
- 1/8 tsp. pepper
- 2 eggs
- 2 c. cottage cheese
- 2 c. Mozzarella cheese, grated
- 1/4 to 1/2 c. Parmesan cheese, grated
- 8 to 10 lasagna strips (pasta)
- Combine in a skillet and cook until brown the ground beef and olive oil.
- Drain off all grease.
- Add onion, garlic, parsley, oregano, basil, tomato sauce, tomato paste, salt and pepper. Simmer 1 hour.
- Cook lasagna strips by package directions and drain.
- Combine eggs and cottage cheese in a small bowl and mix well.
- Grease a 13 x 9 x 2-inch casserole dish.
- Put lasagna together in layers.
