Sweet Bell Peppers Stuffed With Shrimp Imperial
- 1 pound shrimp cut into small pieces
- 1/2 cup mayonnaise
- 1 teaspoon sugar
- 2 teaspoons old bay
- 1 tablespoon chopped parsley
- 1 egg beaten
- 1/2 lemon juice
- 1 cup cooked rice
- pepper
- 1 dash cayenne
- 3 orange large red, or yellow bell peppers cut in half
- paprika to garnish tops
- Prepare the rice according to directions.
- Clean & chop the shrimp. Set aside
- Wash the peppers & cut in half removing stem & seeds.
- Mix mayonnaise, egg, sugar, old bay, lemon juice and parsley together and blend well, this is your imperial sauce
- Fold the shrimp & cooked rice into the imperial sauce.
- Fill the peppers halves and place in lightly buttered baking dish
- .Sprinkle tops with paprika
- Bake in 350 degree oven for 20 minutes or until the peppers are soft. The tops will turn golden brown. If still firm, microwave for a minute or two
- Allow to cool slightly for better flavor.
