South Of The Border Supper
- 1 lb. lean ground beef
- 1/2 c. water
- 1 (16 oz.) can tomatoes
- 1 (15 oz.) can kidney beans
- 1 egg
- 1/2 c. milk
- 1 Tbsp. salad oil
- 1/2 c. all-purpose flour
- 1/4 c. cornmeal
- 1/4 c. instant mashed potatoes
- 1 Tbsp. sugar
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1 envelope chili seasoning mix
- Preheat oven to 425u0b0.
- Prepare chili as directed using beef, water, tomatoes and beans.
- In medium bowl, beat together egg, milk and oil.
- In a small bowl, stir together flour, cornmeal, potato flakes, sugar, baking powder and salt.
- Add to egg mixture and mix well.
- Spoon chili mixture into a 2-quart casserole.
- Drop corn bread mixture by tablespoonfuls into hot chili.
- Bake for 20 to 25 minutes.
