Fast & Easy Spicy Rice Recipe (Jollof Rice)
- 2 11/16 cups rice
- 2 Maggi pcs of, cube or bullion cubes or knorr cubes
- chilli Dried or fresh
- 2 tablespoons oil
- 3/4 cup tomato pure not tinned tomatoes
- 1/3 red pepper
- 1/3 yellow pepper
- 1 white onion
- 1 red onion
- 3 chillies fresh
- salt
- curry powder
- Boil your rice with the maggi cube, salt and chilli. One part rice and three parts water. Cook it one minute less than you would if you would cook the rice for a normal side dish.
- Meanwhile in a large pot (preferable with a thick base) heat up on medium heat and put in your oil. When the oil heats up add your tomato pure (it is a thick tomato paste) . Fry for few minutes.
- Take all your thinly chopped vegetables (you can use a food processor) and fry for few minutes and then turn off the fire. Slowly add your rice and blend in your paste. Your rice is ready to serve.
- You can use any vegetables you like I use mostly (red, green, yellow bell, chilli, red and a white onion)
- Prepare your vegetables and cut them in small pieces. I ended up using more chilli in the end.
- Boil your rice with stock cubes and dried chilli. You can also add salt for more flavour.
- Heat up 2 tablespoons of oil and then fry the tomato puree. Stir a lot since it can easily burn. Add the curry powder. After 1-2 minutes add your vegetables and stir until they cooks.
- Combine your rice with your sauce and you can leave to steam a while in the put for the flavour to combine.nour jollof rice is ready.
- Serve with your protein, salad or just as it is.
