Acai, Blueberry And Coconut Pancakes

  1. Mix together oat flour, coconut flour, shredded coconut, Norbu, baking powder and Acai powder.
  2. Add vanilla, egg, yogurt and almond milk and mix well. Set batter aside to rest for 5-10 minutes.
  3. Spray a frying pan with non-stick spray and heat over medium heat. Add a couple spoonfuls of batter to the pan and allow to cook until bubbles begin forming on the surface.
  4. Arrange berries on top of pancake and flip to cook the other side. Repeat with remaining batter and berries
  5. Garnish with desired toppings and serve immediately.
