Pineapple And Orange Cake

  1. Preheat oven to 300u0b0F. Lightly grease an 8x5 inch loaf pan. Line base and sides with parchment paper.
  2. Cream butter and sugar until light and fluffy. Add eggs, 1 at a time, until well combined. Sift in flour, alternately with milk. Mix in orange zest and vanilla. Fold in pineapple. Transfer to prepared pan and bake for 40-45 mins, until a skewer inserted in the center comes out clean. Let cool in pan for 5 mins then turn out onto a wire rack to cool completely.
  3. Meanwhile, to make the cream cheese icing, beat cream cheese and butter together until creamy. Gradually add powdered sugar. Add orange juice, beating until smooth. Spread icing over cooled cake. Sprinkle with orange zest strips to decorate. Serve.
