Bahamian Pork Chops

  1. Sear seasoned chops in butter or oil.
  2. Place in large casserole.
  3. Saute bacon in skillet until partially cooked.
  4. In bacon grease, saute sliced onion, peppers and garlic until limp. Add ginger.
  5. Remove from skillet.
  6. Stir celery soup and water in skillet until blended.
  7. Put bacon and vegetables over chops.
  8. Pour soup over mixture.
  9. Cover and bake at 350u0b0 for 1 1/2 hours. Remove cover and bake 30 minutes longer.
