FitekçI Of Leek And Feta

  1. Make pasta dough (using a roller or pasta machine) from the semola dura and the egg, mixing in the salt and sumac.
  2. Chop up the leek and dive the feta.
  3. Briefly roast the pine nuts, when they start to discolour, add the leak and some olive oil. When the leek is fried, add the feta and remove from heat.
  4. Roll out the dough to 1 mm thickness, and cut 10 cm diameter circles out of the dough. Reroll any remains to use as much dough as you you can
  5. Put a little bit of the leek-feta-mixture on each piece of though (no more than can sit comfortably in a 5 cm diameter circle).
  6. Fold the circles and press them closed with a fork
  7. Cook for about 4 minutes.
  8. Serve with a little olive oil and basil for garnish.
