FitekçI Of Leek And Feta
- 100 g semola dura (Pasta flour)
- 1 egg
- Pinch of salt
- Pinch of sumac
- 1 stalk of leek
- 50 g feta
- 10 g pine nuts
- Make pasta dough (using a roller or pasta machine) from the semola dura and the egg, mixing in the salt and sumac.
- Chop up the leek and dive the feta.
- Briefly roast the pine nuts, when they start to discolour, add the leak and some olive oil. When the leek is fried, add the feta and remove from heat.
- Roll out the dough to 1 mm thickness, and cut 10 cm diameter circles out of the dough. Reroll any remains to use as much dough as you you can
- Put a little bit of the leek-feta-mixture on each piece of though (no more than can sit comfortably in a 5 cm diameter circle).
- Fold the circles and press them closed with a fork
- Cook for about 4 minutes.
- Serve with a little olive oil and basil for garnish.
