Irish Cream Liqueur And Strawberry Iced Mousse
- 10 scoops vanilla Carte D'Or, Light Ice Cream, 250g/500ml
- 1 3/8 cups strawberries hulled
- 5/8 cup dark chocolate 70%
- 1 teaspoon clear honey
- 7 tablespoons irish cream liqueur
- Cut 100g of the strawberries into slices.
- Put the remaining 150g strawberries into a food processor or blender with the icing sugar, Carte D'Or Vanilla Light Ice Cream and 4 tbsp of Irish Cream Liqueur. Blitz to make a coarse puree.
- Divide the puree mixture between 4 dessert glasses, place in the freezer and semi freeze for 20 minutes.
- Break the chocolate into a small heatproof bowl and place over a small pan of simmering water until melted, remove from the heat and add the honey and remaining Irish Cream Liqueur.
- Remove the mousses from the freezer and top with the strawberry slices.
- Serve immediately with the chocolate sauce drizzled over the top.
