Pumpkin Waffles
- 2 1/2 cups whole wheat flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ground cloves
- 2 cups almond milk
- 15 ounces pumpkin puree
- 1/3 cup oil
- 1/3 cup brown sugar
- 2 teaspoons vanilla extract
- 1/3 cup chopped almonds optional
- 1/3 cup dried cranberries optional
- Preheat waffle iron
- Sift together the flour, baking powder, baking soda, salt, and spices.
- In a separate bowl, vigorously whisk together the almond milk, pumpkin, oil, brown sugar, and vanilla until emulsified.
- Pour the wet ingredients into the dry and mix.
- Prepare waffles according to waffle maker's instructions. If adding almonds and/or cranberries, sprinkle on top of poured batter before closing waffle maker.
