Pumpkin Cookies
- 2 1/2 c. all-purpose flour, mixed with 1/2 tsp. baking soda and 1/4 tsp. salt
- 1 Tbsp. pumpkin pie spice
- 3/4 c. packed dark brown sugar
- 1/2 c. granulated sugar
- 3/4 c. butter, softened (1 1/2 sticks)
- 1 large egg
- 1 c. pumpkin puree (canned or fresh, not pie filling)
- 1 tsp. vanilla extract
- 1 c. golden raisins or regular raisins
- 1/2 c. chopped Macadamia nuts or any nut will do
- Preheat oven to 325u0b0.
- Combine flour mixture and pumpkin pie spice.
- Using electric mixer on medium speed, mix together brown and granulated sugars.
- Beat in butter.
- Add egg, pumpkin and vanilla.
- Beat until well mixed, light and fluffy.
- Stir in flour mixture, raisins and nuts.
- Drop by round spoonfuls onto ungreased cookie sheets 2 inches apart.
- Bake until slightly browned along edges, about 20 minutes.
- Cool cookies on flat surface.
