Orange Babas (Easter Cakes)

  1. Preheat oven to 355u0b0F.
  2. Separate the egg whites from the yolks.
  3. Beat the yolks with the sugar until the mixture achieves a mousse-like texture.
  4. Add the milk and olive oil and mix well.
  5. Add the flour and baking powder and mix.
  6. Whisk the egg whites and add them to the dough.
  7. Butter the molds, even if they are made of silicone. Fill each mold 2/3 of the way and bake for 20 minutes.
  8. While they bake, prepare the syrup by heating the orange juice and honey until they boil.
  9. Remove the mixture from heat and add 4 tablespoons of orange blossom water.
  10. Remove the babas from their moulds and quickly soak them with the hot syrup. Cover and let rest for at least 8 hours.
  11. Peel the oranges. Remove the pits from the dates and cut the dates lengthwise. Place the fruits in a bowl.
  12. Pour the remaining 2 tablespoons of orange blossom water over the fruit and toss.
  13. To serve, garnish the babas with the fruit salad.
