Orange Babas (Easter Cakes)
- 3 eggs
- 6 2/3 tablespoons superfine sugar
- 3 1/2 tablespoons whole milk
- 2 tablespoons olive oil
- 1 1/4 cups flour
- 2 teaspoons baking powder
- 4 1/4 cups orange juice
- 5/8 cup honey
- 4 tablespoons orange blossom water
- 2 oranges

- 2 tablespoons orange blossom water
- Preheat oven to 355u0b0F.
- Separate the egg whites from the yolks.
- Beat the yolks with the sugar until the mixture achieves a mousse-like texture.
- Add the milk and olive oil and mix well.
- Add the flour and baking powder and mix.
- Whisk the egg whites and add them to the dough.
- Butter the molds, even if they are made of silicone. Fill each mold 2/3 of the way and bake for 20 minutes.
- While they bake, prepare the syrup by heating the orange juice and honey until they boil.
- Remove the mixture from heat and add 4 tablespoons of orange blossom water.
- Remove the babas from their moulds and quickly soak them with the hot syrup. Cover and let rest for at least 8 hours.
- Peel the oranges. Remove the pits from the dates and cut the dates lengthwise. Place the fruits in a bowl.
- Pour the remaining 2 tablespoons of orange blossom water over the fruit and toss.
- To serve, garnish the babas with the fruit salad.
