Clinkenbeard'S Famous Chili
- 2 teaspoons vegetable oil
- 1 onion large, chopped
- 1 poblano chopped
- 3 large garlic cloves minced
- 2 pounds stew lean, mean, cut in cubes
- 1 1/2 pounds pork sausage
- 12 ounces tomatoes canned whole
- 6 ounces tomato paste canned
- 3 tablespoons chili powder
- 1 1/2 teaspoons cumin
- 1/2 tablespoon oregano
- 2 teaspoons sea salt sel gris
- 1 teaspoon brown sugar
- 1 tablespoon unsweetened cocoa powder
- 1 pound baked beans canned
- 15 ounces kidney beans canned, drained
- 8 ounces pinto beans canned, drained
- In a large heavy saucepan, heat oil, then saute onion and garlic until soft
- Add beef and Sausage and cook until browned
- Add liquid from canned tomatoes
- Chop tomatoes and add to meat mixture with tomato paste, poblano, chili powder, cumin, oregano, baked beans, salt, sugar, and cocoa powder
- Simmer partially covered for 2 hours, stirring often and paying close attention to moisture level. If it gets dry, add in a little water or beef broth
- Stir in kidney & pinto beans and cook 30 minutes longer (meat should be very tender)
