Trio Of Smorrebrod
- dark rye bread whole grain dark, textural, grainy, moist and dense
- jam As needed bacon, recipe below
- arugula As needed
- tomatoes As needed
- potato chips As needed Kennebec
- bacon As needed strips of thick-cut, chopped
- chives As needed
- extra-virgin olive oil As needed
- 1 pound bacon applewood smoked, 1/2-inch dice
- 1 yellow onion medium, julienned
- 4 cloves garlic minced
- 6 fluidounces dry sherry
- 3 tablespoons brown sugar
- Tabasco Pepper Sauce To taste, or chili sauce
- 8 fluidounces Balsamico Bianco
- 2 fluidounces maple syrup
- black pepper To taste, fresh ground to taste
- kosher salt To taste
- dark rye bread As needed, sliced
- horseradish cheddar pub cheese spread
- sweetheart ham As needed, thin slices, order from Olympic Provisions
- red onion As needed shaved
- gherkin pickles As needed shaved
- eggs As needed, wedge, slice, chopped
- radish sprouts As needed
- crispy fried onions As needed
- 1. In sauce pot add bacon and a little oil, cook until browned and beginning to crisp
- 2. Add onion and cook until translucent and edges beginning to brown
- 3. Add garlic and cook for 2 minutes, mix well to combine
- 4. Deglaze with sherry and reduce until its almost gone
- 5. Add the remaining ingredients, mix well to combine
- 6. Bring to a simmer and cook for approximately 1 hour or until liquid is almost all reduced, stir as needed
- 7. When ready, cool for about 15-20 minutes, place in a food processor and pulse to achieve that "jammy" texture
- 1. On bottom of rye bread, evenly spread Cheddar cheese spread in a thick layer from end to end
- 2. On top of cheese spread, evenly layer Sweetheart ham
- 3. On top of ham, evenly place red onion
- 4. On top of red onion, evenly sprinkle the shaved gherkins
- 5. On top of the gherkins, evenly sprinkle or shingle egg
- 6. On top of egg, evenly sprinkle radish sprouts
- 7. Garnish with crispy fried onions
- 1. On bottom of rye bread, evenly layer porchetta slices
- 2. On top of porchetta, evenly sprinkle pickled red pepper
- 3. On top of pickled red pepper, evenly sprinkle celery leaves
- 4. Drizzle with White Balsamic reduction
- 5. Garnish with thinly sliced crispy garlic
