Breakfast Sundae Bites

  1. In a medium bowl, mix together the dry ingredients: oats, cashews, and pretzels.
  2. In a food processor, pulse together the wet ingredients: dates, coconut oil, and honey. Add the wet ingredients to the dry, and mix with clean hands. Add salt to taste.
  3. Next press the granola cup mixture into a mini muffin pan. Place the pan in the freezer of the KitchenAid(R) Multi-Door Refrigerator for at least two hours.
  4. When the granola cups have set, remove them from the pan using a knife. Top them with a dollop of your favorite yogurt.
  5. Finally, decorate your cups. You can use cereal, sprinkles, honey, fruit, and more. Get creative!
