Breakfast Sundae Bites
- 1 1/2 cups oats
- 1 1/2 cups cashews chopped
- 1/2 cup pretzels chopped
- 8 medjool date pitted
- 2/3 cup coconut oil
- 1/4 cup honey
- sea salt to taste
- 1 cup yogurt
- topping mix your choice
- In a medium bowl, mix together the dry ingredients: oats, cashews, and pretzels.
- In a food processor, pulse together the wet ingredients: dates, coconut oil, and honey. Add the wet ingredients to the dry, and mix with clean hands. Add salt to taste.
- Next press the granola cup mixture into a mini muffin pan. Place the pan in the freezer of the KitchenAid(R) Multi-Door Refrigerator for at least two hours.
- When the granola cups have set, remove them from the pan using a knife. Top them with a dollop of your favorite yogurt.
- Finally, decorate your cups. You can use cereal, sprinkles, honey, fruit, and more. Get creative!
