Banana Split Cheesecake Bars
- 14 whole graham crackers, crushed (about 2 c.)
- 1/3 c. butter or margarine, melted
- 1/4 c. sugar
- 3 (8 oz.) pkg. cream cheese, softened
- 3/4 c. sugar
- 1 tsp. vanilla
- 3 eggs
- 1/2 c. banana, mashed
- 1 c. fresh strawberries, halved
- 1 banana
- 1 (8 oz.) can pineapple chunks, drained
- chopped nuts (for garnish)
- melted semi-sweet chocolate (for garnish)
- Preheat oven to 350u0b0.
- Line 9 x 13-inch baking pan with foil. Mix graham cracker crumbs, butter and sugar together.
- Press into bottom of baking pan.
- Mix cream cheese, sugar and vanilla with an electric mixer on medium speed until well blended.
- Add eggs; mix until blended.
- Stir in mashed banana.
- Pour into crust.
- Bake at 350u0b0 for 30 minutes or until almost set.
- Cool.
- Refrigerate 3 hours or overnight.
- Top with strawberries, banana and pineapple. Sprinkle with nuts.
- Drizzle with semi-sweet baking chocolate. Cut into bars.
- Keep refrigerated.
