Marinated Raw Salmon With Carrot Salad
- 1 1/8 pounds skinless salmon fillet
- 2 tablespoons fresh ginger minced
- 2 tablespoons salt reduced soy sauce
- 2 tablespoons mirin
- 1/2 teaspoon wasabi
- 2 tablespoons nori flakes
- 2 1/4 cups carrots finely sliced
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 tablespoon toasted sesame seeds
- 1 tablespoon miso paste
- 1 tablespoon mirin
- 1/2 cup snow pea shoots
- Cut salmon into 1cm cubes
- Mix with ginger, soy sauce, mirin and wasabi and refrigerate for approximately 1-2 hours before serving
- Serve with shredded nori as a garnish
- Mix sliced carrots, rice vinegar, sesame oil, toasted sesame seeds, miso and mirin together and refrigerate for up to 3 hours before serving
