Cranberry-Orange Bread

  1. Heat oven to 350u0b0.
  2. Grease bottom only of a 9 x 5 x 3-inch loaf pan.
  3. Mix flour, sugar, baking powder, salt and baking soda until mixture is crumbly.
  4. Stir in orange peel, orange juice and egg, just until moistened.
  5. Stir in cranberries and nuts.
  6. Spread in pan.
  7. Bake 55 to 65 minutes or until a wooden pick inserted in center comes out clean.
  8. Cool 5 minutes.
  9. Loosen sides of loaf from pan; remove.
  10. Cool completely before slicing.
  11. Makes 1 loaf. One slice equals 85 calories and 2 grams of fat.
  12. A great low calorie breakfast bread!
