Chicken With Cashews (Szechwan Style)
- 2 whole chicken breasts (about 2 lb.)
- 1 egg white
- 1 tsp. cornstarch
- 1 tsp. soy sauce (light or dark)
- dash of white pepper
- 1 large green pepper
- 1 medium onion
- 1 can (8 1/2 oz.) sliced bamboo shoots, drained
- 1 Tbsp. cornstarch
- 1 Tbsp. cold water
- 1 Tbsp. soy sauce (light or dark)
- 2 Tbsp. vegetable oil
- 1 c. raw cashews
- 1/4 tsp. salt
- 1 tsp. finely chopped ginger root
- 2 Tbsp. vegetable oil
- 1 Tbsp. hoisin sauce
- 2 tsp. chili paste *
- 1/4 c. chicken broth
- 2 Tbsp. chopped green onions (with tops)
- *One
- teaspoontinely chopped dried chili pepper and 1 tablespoon soy sauce can be substituted for the chili paste.
