Queen Mary Mac

  1. Cook pasta with 1 tbsp salt until tender but still firm to the bite. Drain, rinse under cold running water, drain, transfer to a large bowel and set aside.
  2. Preheat oven to 350 degrees. Grease a 9x13 baking dish and set aside.
  3. In a heavy saucepan, melt butter over low heat.nhisk in the flour and cook, whisking or stirring almost constantly, until bubbly & fragrant. About 5 mins; do not brown. Remove from heat.
  4. Meanwhile, in a saucepan, combine milk & evaporated milk and bring just to a boil over medium-high heat. Pour all at once into the butter and flour mixture and whisk until smooth. Season with salt, pepper, and nutmeg. Cook over medium heat and cook, whisking or stirring constantly, until thickened ~5 mins.
  5. Pour over the cooked pasta and stir to thoroughly coat the pasta.
  6. In a bowl, combine the four cheeses, then sprinkle evenly over pasta. Lightly dust the top with nutmeg.
  7. Bake until cheese melts and the pasta is heated through, ~ 25 mins.
  8. Transfer the baking dish to the broiler and cook until the cheese is slightly golden ~ 3 mins.

  10. Tips! Store, covered, in the refrigerator for up to 3 days.no reheat: heat in microwave or preheated, 350 degree F oven until heated through.
