Kare Ayam (Chicken Curry)
- 5 1/4 ounces chicken fillet cut into cubes
- 1 cooking apple thinly sliced, we use granny smith for this
- 1 piece ginger finely chopped
- 1 stalk lemongrass Sereh chopped
- 1/4 onion Bawang Bombay peeled and finely chopped
- 1 red chilli seeded and finely sliced
- 2 tablespoons curry powder
- 1/2 teaspoon chilli powder
- 2 bay leaves Daun Salam
- 300 coconut milk
- 1 tablespoon yoghurt
- 1 pinch black pepper
- 1 pinch cumin Jinten
- 2 basil leaves
- 2 shallots finely sliced
- 2 garlic
- 1 teaspoon paprika
- Place the chicken fillet in a bowl, mix well with garlic, onion, ginger, chilli, shallots, lemongrass and black pepper.
- Sautee the mixture well until fragrant.
- Add the lemongrass, curry powder, cumin, bay leaves, basil, paprika powder and apple slices.
- Mix well together before pouring in the coconut milk
- Stir and simmer gently
- Add the yoghurt before serving.
