Zucchini Hush Puppies
- 3 zucchini - peeled and grated
- 1/2 red onion small, - chopped fine
- 1/4 cup Italian parsley fresh, - chopped
- 1 1/2 cups corn meal
- 1 1/2 cups flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 cup milk
- 2 eggs beaten
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 teaspoon red pepper flakes
- vegetable oil for frying
- 1/4 cup balsamic vinegar
- 2 tablespoons honey
- 1 pinch salt
- 1 pinch red pepper flakes
- 1/4 lemon
- In a large bowl combine the grated zucchini, chopped onion, flour, corn meal, baking soda, baking powder, milk, eggs, and seasonings.
- Mix together and let sit for about 10 - 12 minutes.
- Heat a large cast iron frying pan with about 1/2 inch of vegetable oil.
- Using a teaspoon, carefully spoon the batter into the hot oil. Do not overcrowd the pan. When the fritter is golden on one side, carefully turn over and finish cooking on the other side.
- Lay the fritters on a plate lined with paper towel to.
- Combine all of the ingredients for the dipping sauce in a small bowl and mix.
