Mexican Pizza
- 1 1/2 c. biscuit mix
- 1/2 c. yellow corn meal
- 1/2 c. warm water
- 1 lb. ground beef
- 11 1/4 oz. envelope taco seasoning
- 3/4 c. water
- 1 (4 oz.) can chili peppers, chopped fine (optional)
- 1/2 (16 oz.) can refried beans
- 1 1/2 c. cheese, grated
- 1 1/2 c. lettuce, chopped
- 1 c. tomatoes, chopped
- 1/2 c. onions, chopped
- Combine biscuit mix and corn meal.
- Add 1/2 cup water.
- Mix until soft dough forms.
- Roll dough into a 12-inch pizza pan. Brown ground meat and drain.
- Add taco seasoning and 3/4 cup water to meat.
- Simmer until thick.
- Spread beans on dough.
- Layer with chili, beef, cheese, lettuce, tomatoes, onions and chili.
- Bake at 350u0b0, uncovered, for 10 minutes to 20 minutes until crust is brown.
