Chicken And Walnut Stir Fry

  1. Cut the chicken into bite-size cubes.
  2. Mix the garlic, ginger, soy sauce and chili flakes in a bowl. Add a pinch of salt and cracked black pepper.
  3. Add the chicken. Mix and coat well, and leave to marinate for about 10 to 15 minutes in the fridge.
  4. Heat a wok over high heat until hot.
  5. Drizzle oil into the wok and heat.
  6. Add walnuts and fry until lightly golden. Take out and put into a bowl.
  7. Add the chicken and all of the marinade to the wok. Fry until chicken is cooked. (Break a piece in half. It should be white and have no pink.)
  8. Add the spring onions (scallions).
