White Chicken Chilli

  1. Heat oil over medium heat in a saucepan. Add onion and garlic. Cook 2-3 minutes. Occasionally stir to make sure garlic/onions dont burn or stick.
  2. In a separate (big) pot, add chicken broth, chicken, beans, Rotel, corn, and seasonings. Add onion and garlic mixture. Bring to a boil, then turn heat down to medium-low. Simmer 20-30 minutes.
  3. Garnish with shredded cheese and onions. Makes 8 servings.
