White Chicken Chilli
- 1 tablespoon canola oil
- 1 onion medium, diced
- 4 cloves garlic minced
- 3 cups low sodium chicken broth
- 30 ounces cannellini beans drained and rinsed
- 15 ounces navy beans drained and rinsed
- 24 ounces chicken meat canned low sodium
- 8 ounces diced tomatoes Rotel, with green chiles
- 1 cup frozen sweet corn
- 4 sliced green onions optional
- 1/4 teaspoon cayenne pepper
- 2 teaspoons chili powder
- 2 teaspoons cumin
- 1 teaspoon oregano

- 1 cup shredded Monterey Jack cheese optional
- 4 sliced green onions optional
- Heat oil over medium heat in a saucepan. Add onion and garlic. Cook 2-3 minutes. Occasionally stir to make sure garlic/onions dont burn or stick.
- In a separate (big) pot, add chicken broth, chicken, beans, Rotel, corn, and seasonings. Add onion and garlic mixture. Bring to a boil, then turn heat down to medium-low. Simmer 20-30 minutes.
- Garnish with shredded cheese and onions. Makes 8 servings.
