Lentil And Vegetable Soup
- 200 grs brown or French style lentils soaked overnight
- 1 tablespoon apple cider vinegar
- 2 tablespoons extra virgin olive oil
- 1 large red or brown onion diced
- 2-3 large garlic cloves crushed
- Half capsicum diced
- 1 small choko cubed
- 1 large potato cubed
- 1 large carrot cubed
- 1/2 cup tomato puree
- 1 large zucchini cubed
- Handful green beans chopped
- Sea salt to taste
- Freshly ground black pepper
- 1 teaspoon cumin
- 1 teaspoon turmeric
- 5 bay leaves
- 1 litre water
- 2 ripe tomatoes diced
- Handful coriander leaves chopped for garnish
- Sourdough bread to serve (optional)
- Soak the lentils overnight in 3 cups of filtered water and add a tablespoon apple cider vinegar to the soaking water.
- Heat olive oil in a large saucepan, add garlic, onion, capsicum, turmeric and cumin and cook stirring for 1-2 minutes until onion is translucent.
- Add the lentils, tomato puree, bay leaves and water and simmer for 8-10 minutes. Then add cubed choko, carrot, potato and green beans and let it simmer for 20 minutes.
- At this point add cubed zucchini and diced fresh tomatoes. Let the soup simmer another 10 minutes until the zucchini and remaining vegetables are tender.
- Season with salt and black pepper and serve.
