Lentil And Vegetable Soup

  1. Soak the lentils overnight in 3 cups of filtered water and add a tablespoon apple cider vinegar to the soaking water.
  2. Heat olive oil in a large saucepan, add garlic, onion, capsicum, turmeric and cumin and cook stirring for 1-2 minutes until onion is translucent.
  3. Add the lentils, tomato puree, bay leaves and water and simmer for 8-10 minutes. Then add cubed choko, carrot, potato and green beans and let it simmer for 20 minutes.
  4. At this point add cubed zucchini and diced fresh tomatoes. Let the soup simmer another 10 minutes until the zucchini and remaining vegetables are tender.
  5. Season with salt and black pepper and serve.
  6. Enjoy!
