보쌈 (Bossam) - Steamed Pork Belly

  1. On a wide bottom pan, lay a bed of the onions and garlic
  2. Place the Pork Belly, skin side up over the bed of onions
  3. (Optional) If you want a little more flavor, cover the pork belly on its side and top with thin slices of Green Apple
  4. Close the lid and cook it in medium heat for roughly 15-20 min or till it's done cooking. You can check if it has been cooked through by poking it with a knife or chopstick. If the liquid that comes up is red, then it needs to cook longer. Do not overcook, or it will become dry
  5. Once the Bossam is cooked, let it cool enough to handle with hands and slice into roughly 1/4"-3/8" thick slices. Serve with Pickled Cabbage and Radish Kimchi.
  6. (Optional Additional Step). If you are using the Bossam to make more of a Slider (using Hawaiian rolls) or tacos, place the Bossam into a baking tray or aluminum tray and sprinkle the pork skin with brown sugar and bake it in the oven at 450 degree F to crisp up the skin slightly.
