Small Rosemary Crackers
- 1 1/4 cups whole wheat flour
- 1 3/4 cups white flour
- 1 teaspoon salt
- 2 teaspoons dried rosemary
- 1 egg
- 1 tablespoon olive oil
- 1/2 cup water
- coarse salt
- sesame seeds optional
- poppy seeds optional
- In a bowl, mix the flour, salt, and rosemary.
- Whisk in the the egg, oil, and water.
- Knead the dough until obtaining a ball of elastic and smooth dough.
- Cover with plastic wrap and refrigerate for 20 minutes.
- Preheat oven to 200 degrees Celsius.
- On a floured work surface, roll out a very thin layer of dough.
- Sprinkle with rosemary, poppy seeds, and coarse salt.
- Use a fork to prick the dough.
- Use a serrated wheel to cut out small rectangles.
- Place the crackers on a baking sheet lined with baking paper.
- Bake for 25 to 30 minutes until lightly golden brown.
