Chicken With Beer
- 1/2 chicken
- salt
- ground black pepper
- vegetable oil
- 1 carrot
- 1 onion
- 1/2 leek
- 1 bell pepper
- 1 tablespoon flour
- 12 ounces beer
- 200 milliliters chicken broth
- thyme
- dried rosemary
- Season the chicken with salt and pepper. Add a couple of tablespoons of oil to a skillet on medium-high heat. Fry until golden brown. Remove, drain on paper towels, and set aside.
- Add another tablespoon of oil to the skillet on medium heat. Add the carrot, onion, leek, and bell pepper.
- Add the flour and continue to cook. Once the flour has blended in, add the beer and cook for 1 minute on high heat, allowing the alcohol to evaporate.
- Add the fried chicken, broth, and a pinch each of thyme and rosemary. Simmer for 30 minutes and serve.
