Holiday Double Onion Stuffing
- 1/2 lb. bacon, chopped
- 1 apple, coarsely chopped
- 1 c. celery, minced
- 1 (8 oz.) pkg. cornbread stuffing
- 2 cans Durkee onions (2.8 oz.)
- 1/2 c. sliced almonds
- 1 can chicken broth
- 3/4 c. water
- 2 eggs, lightly beaten
- 1/2 tsp. thyme
- In large skillet, brown bacon lightly.
- Drain off all but 2 tablespoons drippings.
- Add apples and celery; cook until tender. Remove from heat.
- Add onions, stuffing and almonds and mix well. Mix eggs, water, thyme and broth.
- Pour over stuffing and mix well.
- Spoon into 8 x 12-inch greased pan or baking dish.
- Cover and bake at 350u0b0 for 45 minutes, then add Durkee onions to top of stuffing.
- Bake 5 minutes and serve.
- Makes 8 to 10 servings.
