Gratin Of Leeks, Bacon And Cheddar

  1. Preheat the oven to 190 u0b0C.
  2. Peel the leeks, wash them.
  3. Cut them into sections of 4 cm.
  4. Heat a frying pan, with a tablespoon of olive oil, and fry the bacon cut into small pieces so it becomes golden.
  5. Add directly to the pan and cook the leeks over low heat to make them more tender.
  6. Add the stock and mustard and continue cooking for 10 minutes.
  7. Add the cream and most of the grated cheese (do not hesitate to remove a little of the cooking liquid before adding the cream if there is too much).
  8. Place the vegetables in a baking dish, then cover with the breadcrumbs, remaining cheese and a little olive oil. Bake for 20 minutes so they will be well browned.
