Christophe Felder'S Chocolate Muffins
- 5/8 cup dark chocolate
- 50 cocoa
- 7 3/4 tablespoons butter
- 4 eggs
- 3/4 cup sugar
- 7 2/3 tablespoons flour
- 1 tablespoon cocoa powder
- 3 1/2 ounces chocolate
- 60 cocoa
- Preheat oven to 410F.
- Finely chop the chocolate and melt it in a double boiler with the butter.
- Mix until smooth.
- Crack the eggs into a bowl, add the sugar and whisk everything until pale and fluffy.
- Add the chocolate and butter mixture, continue whisking.
- Sift the flour and the cocoa powder over this mixture.
- Mix until smooth.
- Fill the muffin tins with the batter.
- Bake for 12 minutes.
- When the muffins are done, let them cool for a few minutes before removing from the tin. To finish, simply melt the remaining chocolate in a double boiler and then either dip the top of the muffin in it or drizzle over the top.
