Rice Salad With Vegetables And Feta Cheese
- 2 cups whole grain rice previously cooked and cooled
- 1/2 green bell pepper finely chopped
- 1 carrot finely chopped
- 3 tablespoons onion finely chopped
- 1 cup edamame cooked
- 2 tablespoons coriander finely chopped
- 100 grams feta cheese
- jalapeno peppers Optional: finely chopped
- vinaigrette 1 tbsp. or as much as you like
- 1 lemon
- 2 tablespoons olive oil
- salt
- pepper
- Mix the rice, bell pepper, carrots, onion, edamame, coriander, cheese, and jalapeno peppers in a large bowl.
- Mix the lemon juice, olive oil, vinaigrette, salt and pepper in a bowl and mix them together with a whisk.
- Pour the dressing into the bowl with the rice and mix all of the ingredients together.
- Serve immediately or refrigerate for 1 hour before serving.
