Soft Fish Tacos With Jicama-Mango Salad
- 1 mango small, peeled and chopped
- 1/8 strip jicama
- 2 tablespoons lime juice divided
- 2 tablespoons chopped fresh cilantro
- 8 ounces tilapia fillet
- 1 clove garlic finely chopped
- 1/2 teaspoon chili powder
- 4 corn tortillas warmed
- 2 tablespoons promise buttery spread
- Toss mango, jicama, 1 tablespoon lime juice and 1 tablespoon cilantro in medium bowl; set aside.
- Season cod with remaining 1 tablespoon lime juice, chili powder and garlic. Melt Promise(R) Buttery Spread in 10-inch skillet over medium-high heat and cook cod, stirring occasionally, 4 minutes or until cod flakes with a fork.
- Spoon cod into tortillas, then sprinkle with remaining cilantro. Serve with jicama-mango salad.
