Rosemary Olive Oil Bread
- 2 1/2 cups all purpose flour
- 3/4 cup sugar
- 1/2 cup chopped walnuts optional
- 2 teaspoons baking powder
- 2 teaspoons dried rosemary
- 1/4 teaspoon salt
- 1 tablespoon grated lemon zest
- 2 eggs lightly beaten
- 3/4 cup sweet white wine or apple juice
- 1/2 cup extra-virgin olive oil
- non-stick cooking spray
- Preheat oven to 350 degrees F
- Lightly coat one loaf pan with the non-stick cooking spray
- In a bowl, combine the flour, sugar, walnuts, baking powder, rosemary, salt and lemon zest.
- In a different, large bowl, blend the eggs, wine or apple juice and olive oil
- Stir the dry ingredients into the egg mixture
- Transfer the batter to the loaf pan and smooth the top surface of the batter
- Bake for about 55 minutes, or until a skewer inserted into the center of the bread comes out clean.
