Vegan Apple Cinnamon Pancakes
- 2 cups all purpose flour
- 3 teaspoons baking powder
- 1/4 cup sugar
- 1/2 teaspoon salt
- 1 cup water
- 1 cup apple cider
- 1/2 cup applesauce
- 2 teaspoons ground cinnamon
- 1 teaspoon vanilla extract
- In a large bowl, combine flour, sugar, baking powder, salt and cinnamon.
- in a separate bowl, combine water, apple cider, apple sauce and vanilla extract.
- Make a large dome in the dry ingredients, and than combine the wet ingredients in to the dry.
- pre-heat oven to 170 degrees fahrenheit (about 77 degrees celsius) to keep pancakes warm. Put a non-stick pan onto stovetop (medium heat)
- cook 1/3 cup scoopfuls of batter until dry on the edges and bubbly in the middle - note: the batter will get very bubbly but you must wait until the edges are dry -nlip and cook on other side until brown . Put the pancakes on a plate in the warm oven to keep the cakes hot.
- Serve with apples, maple syrup and a glass of warm apple cider. Enjoy!
