Peanut Butter Pie
- 1/4 c. sugar
- 2 tsp. unflavored gelatin
- 1 tsp. nutmeg
- 1/4 tsp. salt
- 1 c. water
- 1/2 c. or more peanut butter (crunchy)
- 2 slightly beaten egg yolks
- 1 tsp. vanilla
- 2 egg whites
- 2 Tbsp. sugar
- 1/2 c. whipping cream
- 1 fully ripe banana
- 1 pastry shell (can use graham cracker)
- Mix first 4 ingredients.
- Slowly add water to peanut butter. Blend smooth.
- Slowly stir in yolks.
- Add gelatin mixture.
- Cook and stir until mixture thickens slightly.
- Add vanilla.
- Chill until partially set.
- Beat egg whites to soft peaks.
- Gradually add remaining sugar; beat until stiff peaks.
- Fold into gelatin mixture.
- Fold into whipped cream.
- Slice banana into pastry shell.
- Top with filling.
- Chill until firm.
