Turkey Quesadillas With Avocado Salsa
- 2 tablespoons olive oil
- 1 red bell pepper deseeded, chopped
- 1 red onion finely chopped
- 2 cloves garlic minced
- 2 teaspoons ground cumin
- 1/4 teaspoon cayenne pepper
- 12 tortillas
- 12 ounces cheddar cheese grated
- 1 pound roast turkey cut into chunks
- 2 avocados pitted, peeled, chopped
- 1 tomato deseeded, chopped
- 2 tablespoons cilantro leaves fresh, chopped
- 1/2 red onion finely chopped
- 1 lime juiced
- Heat 1 tbsp oil in a large frying pan over medium heat. Saute pepper, onion and garlic for 3-4 mins, until tender. Add cumin and cayenne and cook, stirring, for 1 min. Set aside.
- Place 6 tortillas on a clean work surface. Top each with 1 oz cheese, pepper mix, turkey and another 1 oz cheese. Cover with remaining tortillas. Working in batches, heat oil in a large frying pan over medium heat and cook quesadillas for 2-3 mins per side, or until golden. Set aside and keep warm.
- For the avocado salsa, combine all ingredients. Season to taste.
- Cut quesadillas into wedges. Serve with avocado salsa.
