Sweet Chili Chicken Quesadillas

  1. Mix the rice wine vinegar, soy sauce and honey and set aside.
  2. Place the chicken chunks on a baking tray and bake for 20 minutes at 375 degrees.
  3. Heat a skillet on medium heat and add 1/2 the oil for each tortilla.
  4. Cooking one at a time, place the flour tortilla in the skillet.
  5. Drizzle on the sweet chili sauce and 1/2 the cheese on the first tortilla.
  6. Cook for 3 minutes and remove from the pan and set aside.
  7. Repeat the same process for the second tortilla.
  8. On a baking tray, top the tortilla, sauce and cheese with cut up sweet chili glazed chicken chunks.
  9. Return to the oven for 3 minutes.
  10. Dress the salad with the dressing.
  11. Remove the quesadillas from the oven. Top with the salad.
  12. Serve and enjoy!
