Vegetable Lasagna
- 10 oz. pkg. frozen chopped spinach
- 2 (8 oz.) cans tomato sauce
- 4 oz. can sliced mushrooms
- 6 oz. can tomato paste
- 1/4 c. onion, finely chopped
- 1/4 tsp. garlic powder
- 1/2 (16 oz.) pkg. lasagna noodles, cooked
- 2 c. small curd cottage cheese
- 6 oz. grated Mozzarella cheese
- 2 tsp. leaf oregano
- 1 tsp. basil
- 1 tsp. salt
- In 12 x 8-inch glass dish, place unwrapped frozen block of spinach.
- Microwave at Low for 12 to 14 minutes, breaking apart after 10 minutes or until thawed.
- Drain.
- In small bowl mix together tomato sauce, tomato paste, mushrooms, onion, oregano, basil, salt and garlic powder.
- Spread 1/2 cup sauce over bottom of 12 x 8-inch dish.
- Over sauce, layer half lasagna noodles placed lengthwise with spinach, half of cottage cheese, half of Mozzarella cheese and half of tomato sauce in dish.
- Repeat layers with noodles placed horizontally.
- Microwave at Medium-high for 19 to 21 minutes.
- Makes 6 to 8 servings.
