Creamy White Chocolate And Coconut Milk Fruit Salad
- 1 cup coconut milk
- 1 package chocolate instant pudding 4 servings white
- 30 ounces fruit cocktail drained really well
- 30 ounces peach chunks, drained really well
- mandarin oranges 2, 15 oz canned, drained really well
- 40 ounces pineapple chunks drained really well
- In a medium bowl, add coconut milk and instant pudding and mix until creamy and smooth with a wire whisk (If the mixture is lumpy, pour through a sieve, and it will be fine.); set aside until thickens.
- In a large bowl, add all the drained fruit. Pour pudding mixture over fruit.
- Fold in the pudding mixture with the drained fruit coating fruit well being careful not to break down the pudding texture. Refrigerate immediately so the pudding and fruit will set. Refrigerate at least 2 hours before serving.
