Lamb Tagine With Dates

  1. Heat oil and cook onion. Add lamb, carrots and spices and cover with water. Bring to just under boil. You may wish to add a Knorr Lamb Cube.
  2. Add tomato puree, over and simmer for 1 hour 20 minutes.
  3. Add apricots and honey and any seasoning. Simmer uncovered for 20 minutes until thick and soupy.
  4. Add dates and simmer for a further 5 minutes. Scatter with parsley leaves and serve with couscous or quinoa
