Lamb Tagine With Dates
- 1 tablespoon olive oil
- 1 onion finely sliced
- 2 1/4 pounds lamb cubed
- 2 3/4 cups carrots chopped
- 8 dates
- 2 1/2 cups dried apricots
- 1 tablespoon clear honey
- 2 tablespoons parsley
- 1 tablespoon tomato puree
- 1/2 teaspoon cayenne pepper
- 1 teaspoon ginger I prefer fresh grated ginger
- 1 teaspoon turmeric freshly grated, I prefer fresh grated root turmeric - so superior to powdered! I buy 500g, grate it all in one go then freeze in tsp sizes
- 2 cinnamon sticks
- 2 teaspoons paprika
- Heat oil and cook onion. Add lamb, carrots and spices and cover with water. Bring to just under boil. You may wish to add a Knorr Lamb Cube.
- Add tomato puree, over and simmer for 1 hour 20 minutes.
- Add apricots and honey and any seasoning. Simmer uncovered for 20 minutes until thick and soupy.
- Add dates and simmer for a further 5 minutes. Scatter with parsley leaves and serve with couscous or quinoa
