Chicken Canton

  1. Melt butter and add celery, onion and almonds.
  2. Brown lightly and add salt and chicken.
  3. Combine cornstarch with water and pineapple juice, soy sauce and lemon juice.
  4. Mix until well blended.
  5. Add to chicken mixture in skillet and cook, stirring constantly until thickened.
  6. Stir in carrots and pineapple chunks, cover and simmer 15 minutes.
  7. Serve over noodles.
