Beef Koftas With Rice Salad
- 1/4 cup oil
- 1 onion small, finely chopped
- 2 cloves garlic minced
- 2 teaspoons curry powder
- 1 pound ground beef
- 2 tablespoons fresh parsley chopped
- 1 egg
- 1 red chili long, finely chopped
- 1/2 lemon zested
- salad Rice
- 3 ounces long-grain rice cooked
- 2 tomatoes seeded, chopped
- 4 sprigs cilantro leaves fresh, picked
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Heat 1 tbsp oil in a large frying pan. Saute onion and garlic for 1-2 mins, until tender. Add curry powder. Cook, stirring, for 1 min. Remove from heat and let cool slightly. Mix with ground beef, parsley, egg, chili and lemon zest. Shape into 12 small sausages, each around 6 inches long. Mold around 12 soaked bamboo skewers. Chill for 10 mins.
- Meanwhile, to make the rice salad, combine all ingredients. Season. Set aside.
- Working in batches, heat remaining oil in a large frying pan. Cook koftas for 6-8 mins, turning occasionally, until cooked through. Serve on a bed of rice salad.
