Pecan Chocolate Fudge Deluxe
- 2 c. sugar
- 1 c. evaporated milk
- pinch of salt
- butter or margarine
- 2 sq. bitter chocolate
- 1 to 1 1/2 tsp. cocoa
- 1 tsp. vanilla
- 1 c. or more pecans
- Into a heavy, wide-mouthed saucepan, put 2 cups of granulated sugar, 1 cup of evaporated milk, a pinch of salt, butter the size of a walnut, 2 squares of bitter chocolate and a generous teaspoon of cocoa.
- Cook over low heat until the sugar melts, then over a medium flame until the mixture thickens and heavily clings to the spoon.
- (It must be really thick!)
- Remove from heat; stir in a teaspoon of vanilla and let stand a few minutes.
- Beat until the gloss is gone from the candy; stir in a cup or more of pecans, whole or broken.
- Pour into a buttered pan; cut into squares when possible, with a knife dipped in hot water after each cutting.
