Spinach Salad With Grilled Halloumi

  1. To make the vinaigrette, mix the lemon juice and honey, and season to taste. Mix in the sesame oil and add the peanuts.
  2. Preheat your grill or a stovetop grill pan. Brush the cheese with olive oil and grill for 6-8 mins, turning once. Sprinkle with chili sauce and cilantro.
  3. Meanwhile, to assemble the salad, toss the spinach and apricots with the vinaigrette. Serve with the cheese.
