Sweet Potato Praline Pie
- 1/2 c. butter or margarine
- 1 c. chopped pecans
- 1 c. cooked sweet potatoes, mashed
- 3 eggs, beaten
- 1/2 c. brown sugar, packed firmly
- 1 c. dark corn syrup
- 1 tsp. pumpkin pie spice
- 1 1/2 tsp. vanilla extract
- 2 Tbsp. bourbon (optional)
- 1 unbaked 9-inch pastry shell, unbaked
- whipped cream
- Melt butter in a large, heavy saucepan. Add pecans and cook over low heat, stirring constantly, until butter is golden brown and pecans are toasted.
- Remove from heat; stir in next 7 ingredients, mixing well.
- Pour mixture into pastry shell. Bake at 425u0b0 for 10 minutes. Reduce temperature to 325u0b0 and bake an additional 45 minutes or until set. Cool on wire rack. Top with whipped cream.
