Prawn Pad Thai
- 2 tablespoons peanut oil
- 2 1/4 pounds prawns peeled, tails left intact and deveined
- 4 cloves garlic crushed
- 1 pound ground chicken
- 3 eggs lightly beaten
- 13 1/4 ounces rice noodles soaked in boiling water for 5 mins then drained
- 7 ounces sauce pad thai
- 8 spring onions sliced
- 4 ounces bean sprouts
- 3 ounces cilantro leaves fresh
- 2 ounces peanuts toasted, crushed
- 2 red chilies long, thinly sliced
- lime wedges to serve
- In a wok or large frying pan, heat 1 tbsp oil over high heat. Stir-fry prawns and crushed garlic for 2-3 mins. Remove from heat, cover and keep warm.
- Add remaining oil and garlic over high heat. Add ground chicken and brown for 4-6 mins. Add eggs and cook, stirring, for 1-2 mins until almost set. Add noodles, pad thai sauce, spring onions, and prawns. Top with bean sprouts, cilantro, peanuts and chilies. Serve with lime wedges.
