Vegetarian White Bean Ragout
- 1 3/8 cups light beer
- 1 11/16 cups vegetable stock
- 2 onions medium, finely diced
- 3 cloves garlic finely chopped
- 2 red peppers diced
- 2 chilli peppers finely diced
- 4 tablespoons white wine vinegar
- 1 bunch coriander chopped
- 2 cans butter beans
- 1 teaspoon smoked paprika
- 1/2 teaspoon oregano
- 4 tablespoons lime juice
- Bring the beer, stock, onions, garlic, peppers and chili pepper to a boil, cover and simmer for about 5 mins.
- Reserve 1 tbsp of cilantro for garnish and mix the rest with the vinegar. Add this to the vegetables along with the beans, paprika, oregano and lime juice to taste. Simmer for about 10 mins, seasoning with salt and pepper. Sprinkle with the reserved cilantro to serve.
